Recovery from catastrophic failure with Exchange Server

We were approached by this Cental London Sports Media Group when their Microsoft Exchange Server had suffered a catastrophic failure and it turned out their backups were unusable. Worse, after a weekend of telephone support Microsoft had declared the environment to be dead.
